Then there was Meryl Streep?s best actress upset?an upset by the standards of this year?s set-in-stone race, anyway?a mild but pleasurable surprise that made me realize I?d secretly wanted her to win all along. The Iron Lady was terrible, yes, but that made her triumph in it all the more surprising?how could a movie this bad contain a performance this good? And for all the awards she?s garnered over the past 30 years, for all the genuine graciousness with which she?s insisted Viola Davis should get this award?for all that, you could tell from her face when she found out that Streep really wanted it. That was what I loved most about Meryl?s funny, heartfelt, perfect acceptance speech: her self-mocking but not faux-humble admission that, oh yes, she cared all right. Her mimicking of the reaction of a Streep-fatigued America??Oh come on, whyyyy? Her again??, followed by a breezy wave of the hand and a dismissive ?Whatever!??has me on the floor even rewatching it the day after (I also cried a second time during her fluttering tribute to the makeup and hair man she?s worked with for 30 years, who had just won an Oscar for The Iron Lady.) The French have that expression, bien dans sa peau, for a person who feels ?good in her skin,? who seems somehow at ease with the fact of being alive. I may never have Meryl Streep?s talent or fame or shimmering 62-year-old complexion, but we can all aspire to that one day being that bien in our peau.

The Airy Way: The wonderful world of fresh chutney

I have been cooking lately, a lot, even for me, all Indian food all the time, which I hope my neighbors in my building appreciate as much as I do.? To be honest, I've probably tested their patience enough, though as of yet no one has slipped a note under my door telling me so...Indian spices are coming out of my pores when I exercise so they're most likely making their way down the common hallway as well.

But I can't stop.? These are not 30-minute meals; they're 3-hour experimental extravaganzas, difficult to blog because everything is so very new and fun that there's nothing in particular I can get a proper focus on.

Also, I've had trouble, which sounds sort of peculiar, arranging the food properly on a plate.? Normally, as you know, I let everything duke it out in a bowl, but that doesn't cut it with Indian meals because not all the items are friends with all the others, and the way you eat these meals is complex in itself, arranging little tasty mouthfuls of this and that, or this, that, and the other thing, spooning a bit of saucy curry over rice, dipping up some raita with a piece of flatbread, following a bite of something fiery hot with a cooling chaser.? In the end, I've settled on a sort of thali arrangement, like you might get in an Indian restaurant, with the different foods separated in bowls on a large round plate.? There are actual thali plates, big round metal plates with shallow indentations to keep the various foods separate, but I don't have one.? I do, however, have a lot of little bowls.


So yesterday it snowed all day, our first real snowstorm of this extraordinarily mild winter, and since I couldn't get out without making some kind of extraordinary effort, and since I'd just been to Chinatown on Friday with my friend Fi, where I found big fresh bundles of methi leaves and curry leaves and some gorgeous little bowls...okay, I found three large grocery bags of stuff but then I don't get to Chinatown all that often...anyway, I decided to make an afternoon of it and experiment with a few chutneys.

My guide on this journey has been Neelam Batra's 1,000 Indian Recipes.? This is a perfect book for Western cooks with intermediate Indian cooking skills, like me.? Apart from being big and heavy and of many pages, with recipes that are easy to follow and always work out, lots of definitions and explanations of basic techniques, and being very kind about giving the English as well as the Indian names for things (split pigeon peas and toor dal; fenugreek leaves and methi), it's an omni cookbook, but vegan friendly: all the vegan recipes are marked with a big "V" and you've got to love a cookbook where the meat recipes are consigned to a section called "Non-Vegetarian Fare."

In my family, we grew up making rhubarb chutney, green tomato chutney, fruit chili--boiled, jam-like concoctions, very sweet, that will keep in a sealed jar for ages.? But in Indian cooking, there are two main types of chutney--that "jammy" kind, called preserved chutney, and fresh chutney, which won't keep longer than a few days in the fridge and is more like a salsa.? This post is about the fresh kind, of which I made:

1.? Basic green chutney (Hari chutney)

I don't want to infringe on Ms. Batra's copyright, but here's Manjula's version.? Get together your green onions, cilantro, mint (frozen in this case), lime juice, green chilis, and sugar and process to a paste:


Add salt and pepper to taste.? You're done.? Easy peasy:
2.? Roasted dal and fresh green chile pepper chutney (Bhel-puri ki chutni)

Bhel-puri is a kind of Indian snack made with potatoes and puffed rice, and is served with many kinds of chutneys, including this one.? You can check out the recipe if you like on Google Books.? It's like the basic green chutney, but with split chickpeas (channa dal) added.? Start by roasting your washed dal:

While it's roasting, gather together your fresh ingredients and grind them up into a paste:
Once the dal is roasted:
...let it cool, then powderize it up in a spice grinder (I use the Magic Bullet):
Mix the dal with the green paste, add salt to taste:
Delicious!

3.? Roasted coconut chutney (Bhunae nariyal ki chutni)

Here's a version from Mamta's Kitchen.? A really pretty start:?


Lightly roast all this stuff together, until it turns into this: ...while you bake your dessicated coconut in the oven on low heat until it's golden.? The smell from this is simply amazing:
Grind up the coconut.? Mine turned into a sort of delicious roast-coconut butter.? Not sure if that's right, but it's what happened and the results were yummy, so I won't complain:
This chutney is a little more complex.? You finish it off with a tarka of oil, mustard seeds, dried hot peppers...

Add the ground spice mix to the ground coconut along with some tamarind paste and the tarka:
...to get the finished chutney:
This looks a little dull, perhaps, but it is packed with flavour, and I ate way too much of it just as is.

4.? One more, a dal-based chutney this time, which is meant to be stirred into yogurt, Yogurt chutney with roasted dals and spices (Dahi aur bhuni dal ki chutni).? Start with some dry split chickpeas, urad beans, and mung beans (channa dal, urad dal, and moong dal):


Dry roast them:
The rest is all tarka.? Start with black mustard seeds and dried chilis:
Add curry leaves, dried coconut, chopped ginger and fresh chili, and asafoetida:
Roast it some more:
Now separately grind up the dals in a spice grinder, add cilantro to the spice mix, and grind that all up too, and mix everything together:

?So...now that you've got all these chutneys, how to use them?

First, you can make big batches and freeze them in little portions, in an ice cube tray, for instance, so you don't have to go through all this trouble more often than occasionally.? I made little batches because I was experimenting.

The chutneys can all be served plain as a condiment, perhaps with a bit of water added to make them softer.

They can be mixed up with yogurt, or yogurt and cold vegetables like cucumber and/or tomato, to make another kind of chutney, or a raita, or with warm vegetables to make a side dish.

Spread them into a sandwich.

Use them as a dip or salad dressing.

Mix them up with cooked rice for flavoring.

Pour them (with or without yogurt) over cooked vegetables.

Have them with yogurt and bread as a quick little meal or snack.

Use them for adding a burst of flavour to soups and stews.

Don't forget to label them!

Here's something I made up, though I'm sure it's not original.? I mixed some fresh sesame-peanut chutney with a little water and two tablespoons of chickpea flour to make a paste:


...then stuffed some little Indian eggplants with it:
...and fried them on low heat, covered, until the eggplants were tender and the chickpea flour was cooked through:
So good!

So...it's still snowing.? I wonder what I'll get up to today?? I did pick up some amaranth leaves in Chinatown...

Gov. Jerry Brown takes case for Medi-Cal cuts to Washington

Reporting from Washington -- Gov. Jerry Brown delivered a message to the Obama administration this week in Washington: Back off.

The governor wants the federal government to let him make more cuts in the Medi-Cal program that serves low-income Californians and to exempt state schools from new sanctions that could cost hundreds of millions of dollars.

Brown said he raised the issues in a White House meeting with President Obama and 11 other Democratic governors Friday morning and in a private meeting with Education Secretary Arne Duncan on Thursday.

Brown told reporters at the White House on Friday that he was asking for "greater flexibility so that we can cut the Medi-Cal program where we need to and ? flexibility on some of the federal restrictions on our education programs."

Brown's proposed budget, which would take effect in July, depends on about $500 million in annual savings by requiring low-income patients to pay part of their own healthcare costs. The governor would require Medi-Cal patients to pay up to $200 for a hospital stay, $50 for emergency room visits, $5 for routine doctor and dental appointments and $3 for prescription drugs.

Earlier this month, the Obama administration rejected that scenario. The Centers for Medicare and Medicaid Services, the federal agency that rejected the state's plan, refused to comment about the governor's push or about whether the state ultimately will be given leeway to make the healthcare cuts.

After his meeting with the president, Brown said he was "optimistic that we can get some compromise on that waiver" but did not offer specifics.

The governor's top legislative aide, Nancy McFadden, also held meetings with senior White House staff Friday on the Medi-Cal issue, and Brown is scheduled to meet with Health and Human Services Secretary Kathleen Sebelius this weekend.

Advocates for the poor say the governor's proposal would cause people to neglect their health.

"Co-pays are going to be a disincentive for people to seek care," said Elizabeth Zirker, an attorney for Disability Rights California. "That's just going to prevent poor people from seeking care and drive up the cost of providing healthcare."

Brown says the state's schools also need a reprieve ? from some of the sanctions in the federal No Child Left Behind law. The state Department of Education recently estimated that failure to receive a waiver could cost California schools more than $200 million in 2014.

Duncan has given states an opportunity to apply for exemptions from requirements that all students test at grade level in math and reading. But state education leaders and Brown have bristled at some new requirements that Duncan wants to impose on states that opt out.

Among the most troubling, Brown has said, is Duncan's demand that districts use student test scores to evaluate teachers and principals ? something the governor has long opposed.

In 2009, then-Atty. Gen. Brown penned a tersely worded letter to Duncan about the secretary's desire to link test scores to teacher evaluations. "The basic assumption ? appears to be that top-down, Washington-driven standardization is best," Brown wrote. "... I sense a pervasive technocratic bias and an uncritical faith in the power of social science."

Brown admitted that his communication with the education secretary was still evolving.

"The Duncan [relationship] is a work in progress," Brown said. But he said he hoped the secretary would make room for "diversity and flexibility in what California does, so we don't have a monolithic approach."

Only One Way to Turn

It's three or four in the morning on Wednesday, January 30, 2008, four days before the Super Bowl, the biggest game of my life, and I'm asking, "What does this mean?" My left knee is swollen. It looks like there's a golf ball attached to the inner side of my left knee. New York Giants trainer and coordinator of rehabilitation Byron Hansen has just told me I have a grade one sprain of the medial collateral ligament in my knee. All I know is that it hurts like hell and I can barely put any weight on my knee.

I've never had this, so I'm asking, What does this thing mean? They tell me the swelling will be there for like seven to ten days. I say, "Will I be able to play?" "I can't answer that question," Giants head trainer Ronnie Barnes says. I just bust out crying. How can this happen to me? It's going on Wednesday of Super Bowl week. I'm talking trash in the press all week. Now maybe I can't go on the fi eld with my teammates and play with them? Can you imagine how that's going to look to the media?I predict we're going to beat the 18?0 New England Patriots and then I don't play?

This is how it is for me all season. From the start of trainingcamp, when my left ankle was still recovering from surgery in the off season, to the season, when I tore the ligament off the bone of my right ankle and shredded a ligament in my left pinkie, to when I separated my shoulder in the playoffs at Green Bay. My whole season is about playing in pain.

Then again, that's sort of what my whole life is like. When you grow up in the hood, you become immune to the pain. It's like sleeping through gunshots in the neighborhood. You just do it. We all deal with pain in this league. You better learn to play with pain. Still, there are a couple of times when I really think I'm going to have to shut it down, that I just can't play anymore this season.

I spend the next four days and even part of the Super Bowl wondering if this was going to be the time I have to stop playing. Wednesday morning is when I'm the most worried. Everybody who knows is worried. Hansen doesn't know what to tell me, Coach Tom Coughlin is freaking, and general manager Jerry Reese is worried. We all know one thing, though. We have to keep the New England Patriots from fi nding out.

This is how it works in the NFL. You have to keep the injury information hidden as much as possible. Especially now, with the championship on the line. I can't even tell people how I got hurt, stepping out of the shower on Tuesday morning, getting ready for media day. We're staying at the Sheraton Wild Horse Pass Resort and Spa in Scottsdale. Really sweet place. The showers are all glass on one side. As I'm stepping out of the shower, there are a couple of steps up and then you step out. As I push the door open and step out, my foot slides and gets caught under the door and I start to fall backward.

I'm trying to catch myself, but there's nothing to grab, so I fall and my foot gets caught under the door as I fall back. There is a little jolt of pain, but it doesn't feel too bad. We get to the stadium and we're waiting around, sitting and joking amongthe guys, and my left knee starts to get sore. I tell one of the trainers that I need a bag of ice. I ice it down and then we head out to do the interviews on the fi eld at the stadium (the University of Phoenix Stadium, where the Super Bowl is to be played). There's thousands of people and they're all asking me about my prediction from the day before. Man, I didn't even know I was giving a prediction. But we're at the hotel the day before checking in and I walk through the hotel and some guy says, "What do you think about Sunday?" I say, we'll win, 23?17, and I didn't think anything about it. The next day, I get like forty text messages with everybody saying, "We're behind you, man, we love the prediction." I think to myself, What prediction? But I said it and now all of a sudden it's national news, so that's cool. I just go with it.

But when it's all done and we go over to take the team picture, my knee is still sore. So I'm leaving the fi eld and I say, "Damn, something doesn't feel right." I need to get another bag of ice and I tell Ronnie Barnes. I lean over and check my knee. But he checks it, too, and says everything seems okay.

As the day goes on, the pain gets worse and I ask Barnes to look at my knee again. No problem. So I go out that night with my teammates, returning to the hotel in time for the 1 a.m. curfew. I fall asleep but a few hours later wake up and the knee is worse than before.

About three or four o'clock in the morning, it's like damn, what is going on? I turn the light on and my knee is swollen. I get out of bed and my left leg is hurting so bad I can barely stand up. I pick up the phone and call Byron and tell him, "You need to come look at my knee." He comes down and pushes my knee around some more and that's when he fi gures it out.

Later on, I fi nd out sometimes when you sprain the medial collateral ligament just a little, it doesn't even show up onan X-ray or MRI. They gave me another MRI and it showed up at that point. The good news is I don't need surgery. The MCL heals on its own.

3. Move around

4. Eat a fiber-rich cereal for breakfast

High-fiber breakfast helps maintain blood sugar levels throughout the day lowering the possibility of diabetes, a known accelerator of aging.

5. Get at least six hours of shut-eye

Make sleep a top priority- a minimum of six hours per night.

6. Consume whole foods, not supplements

Whole foods are superior to supplements. Avoid nutrient-lacking white foods (breads, flour, sugar) and go for colorful fruits and vegetables and dark, whole-grained breads and cereals.

7. Be less neurotic

Try not to internalize things or dwell on troubles. Avoid junk food, extended time in front of the television and binge drinking. Try yoga, aerobic exercise, tai chi or just periodic deep breathing.

8. Be a creature of habit

Physiology becomes frail as we age. Maintaining routines when it comes to diet, sleep, exercise and daily activities keeps the immune system healthy and allows us to bounce back from threats to our health.

9. Stay connected

Regular social contacts are key to preventing depression that may lead to an earlier death. One of the biggest benefits of exercise is having the strong interactions that come from walking with a buddy or participating in an exercise class with others.

10. Be conscientious

This is the strongest personality predictor of a long life. This trait includes being prudent, persistent, and well-organized. Conscientious people are more inclined to follow doctor?s orders, take the right medicines at the right doses, and undergo routine checkups.

(AP) ? From the family-friendly avenues of the Garden District to raunchy displays in the French Quarter, New Orleans let loose with a Fat Tuesday party as parades rolled and revelers frolicked amid showers of beads, trinkets and music.

The French Quarter began to fill with costumed revelers soon after dawn. Some people hadn't stopped drinking since Monday's Lundi Gras prequel to Mardi Gras.

Wearing a bright orange wig, a purple mask and green shoes, New Orleans resident Charlotte Hamrick walked along Canal Street to meet friends.

"I'll be in the French Quarter all day," Hamrick said. "I don't even go to the parades. I love to take pictures of all the costumes and just be with my friends. It's so fun."

Across the globe, people dressed up in elaborate costumes and partied the day away. In Rio de Janeiro, an estimated 850,000 tourists joined the city's massive five-day blowout. Meanwhile, the Portuguese, who have suffered deeply in Europe's debt crisis, defied a government appeal to keep working.

In New Orleans, Brittany Davies was struggling through the early morning hours. Still feeling the effects of heavy drinking from the night before, her friends had her out again on Tuesday.

"They're torturing me," the Denver woman joked. "But I'll be OK after a bloody mary."

The predominantly African-American Zulu krewe was the first major parade to hit the streets, shortly after 8 a.m. Most krewe members were in the traditional black-face makeup and the Afro wigs Zulu riders have sported for decades.

In the oak-lined Garden District, clarinetist Pete Fountain prepared to lead his Half-Fast Walking Club on its annual march down St. Charles Avenue.

Fountain, 82, gave a thumbs up to start off and his band launched into "When The Saints Come Marching In" as they rounded the corner onto St. Charles Avenue shortly after 7 a.m. It was the 52nd time that Fountain's group has paraded for Mardi Gras. This year, the group wore bright yellow suits and matching pork pie hats for its theme, "Follow the Yellow Brick Road."

In the Quarter, Joshua Westbrook of Dothan, Ala., had been on Bourbon Street drinking since Monday afternoon. His eyes were tired Tuesday morning but he was determined to see Mardi Gras through.

"I'm struggling, but I'm going to push through it," he said.

Costumes were the order of the day, ranging from the predictable to the bizarre.

Wearing a purple wig, New Orleans resident Juli Shipley carried a gallon of booze down Bourbon Street and filled her friends' cups when they got low. "We're going to wander all day and people-watch," Shipley said. "That's the best part of Mardi Gras ? the costumes. They're amazing."

Partygoers were dressed as Wizard of Oz characters Dorothy and the Wicked Witch, bags of popcorn, pirates, super heroes, clowns, jesters, princesses and lots of homemade costumes with the traditional Mardi Gras colors of purple, green and gold.

Martin Delaureal, a New Orleans investment banker, and his toddler sons Tripp and Ashton were dressed as chefs, in tall hats and white aprons. Delaureal's hat was labeled Chef Menteur ? a local highway named after an Indian chief. Delaureal said his wife made the costumes, planning to come as Bun in the Oven. She had to miss the parades ? baby Liam was born Monday.

Retirees Julie and Mike Keating of Golden, Colo., were in a group of four dressed as birds and other characters from the Angry Birds online game.

At New Orleans' antebellum former city hall, Mayor Mitch Landrieu toasted Zulu's make-believe royalty and celebrities. Among them was New Orleans native and former U.S. Ambassador Andrew Young.

"It's good to be home," Young said. And saluting the good weather of the day, he added, "God always smiles on New Orleans when it needs it."

After Zulu, the parade of Rex, king of Carnival, would make the trek down St. Charles Avenue and to the city's business district, with hundreds of thousands of people pleading for beads and colorful aluminum coins, known as doubloons.

Along St. Charles, groups of people, many in costumes, ate breakfast as children played in the street. Small groups were already on the move. The Skeleton Krewe, 25 people dressed in black skeleton outfits, were on their way to the St. Louis Cathedral.

Tom White, 46, clad in a pink tutu, bicycled down the avenue with his wife, Allison, on their way to the French Quarter. "I'm the pink fairy this year," he said. "Costuming is the real fun of Mardi Gras. I'm not too creative but when you weigh 200 pounds and put on a tutu people still take your picture."

His wife was not in costume. "He's disgraced the family enough," she said.

The stakeout for prime spots along the Mardi Gras parade route started Monday, with legions of Carnival die-hards jockeying for the best places to vie for beads thrown from floats on Fat Tuesday.

Stephanie Chapman and her family had set up in their usual spot on the St. Charles streetcar tracks. They arrived at 4 a.m. Tuesday and would be staying for the duration.

"This is a beautiful day and we'll be here until it's over. It won't rain on my parade, but if it does I won't pay any attention," she said.

It was partly cloudy, but rain was not in the forecast. Temperatures were in the 70s. And as the day wore on, the warm weather was expected to encourage flesh-flashing and other raunchy acts in the French Quarter.

Across the Gulf Coast, Mardi Gras was getting into full swing. In the Cajun country of southwest Louisiana, masked riders were preparing to go from town to town, making merry along the way in the Courir du Mardi Gras. And parades were scheduled elsewhere around Louisiana and on the Mississippi and Alabama coasts. The celebration arrived in Louisiana in 1682 when the explorer LaSalle and his party stopped at a place they called Bayou Mardi Gras south of New Orleans to celebrate. The site is now lost to history.

The end of Mardi Gras gives way to the beginning of Lent, the period of fasting and repentance before Easter Sunday.
